It's evident that the temperature of the grill is crucial for achieving a good sear on the meat, but what’s the purpose of searing in the first place? The reason lies in a process known as the Maillard reaction, which takes place when the meat comes into contact with the hot grill. Without delving too deeply into the science, the Maillard reaction alters the amino acid composition in food, enhancing its flavor and enriching the meat's color; this is also why caramelized foods are so delicious.
To attain the ideal sear, the grill should not only be within that optimal temperature range we discussed, but it also needs sufficient time to preheat. Allow it about 15 minutes to heat up the surface thoroughly before placing any burgers on it. After that, cook them for just a few minutes, depending on your preferred internal temperature and doneness. For medium-rare burgers, aim for about three minutes on each side, while well-done burgers should be cooked for around 10 minutes per side.
How to assess your grill's temperature

While the general guideline suggests that medium-high heat typically falls within the 375 to 400 degree Fahrenheit range, not all grills are created equal. Some come equipped with built-in thermometers, which can simplify the process. However, if your grill lacks this feature, there's a handy trick you can try.
You could use a portable thermometer inside the grill, but another method is the hand test. This involves gauging how long you can hold your hand above the grill without it becoming uncomfortably hot. Make sure to keep your palm about three inches away from the grates and see how long you can maintain that position. If you can hold it there for four to five seconds, your grill is at the ideal temperature. If you can hold it longer, it’s too cool; if you can’t hold it for long, it’s too hot. Repeat this test every minute or so until you achieve the desired temperature.
