Bringing the brine to your chops

To create a simple brine, you'll need just two ingredients: salt and water. Start by boiling 1 cup of water with 3 tablespoons of kosher salt (if you're using regular table salt, you can reduce this to 2.5 tablespoons). While the water is boiling, consider adding some extra flavor with a bay leaf, a few crushed garlic cloves, peppercorns, or any of your preferred seasonings.
Next, cool down the brine by mixing in 2 cups of cold water, then pour it over your pork chops in a bowl or container. Let the meat marinate in the refrigerator for anywhere from 30 minutes to 4 hours, depending on your schedule. If you have the time, allowing the chops to brine for a longer period will enhance their flavor.
When you're ready to cook, simply remove the pork from the brine and pat it dry with a paper towel. You can prepare the chops as you normally would. Whether you choose to grill them (and you can find answers to any questions you have about grilling beforehand) or opt for searing and baking, this brining method is particularly effective. So, give your pork a soak in this flavorful, salty solution, and say goodbye to worries about dry chops.
